Carrot Cake
2 cups sugar
4 eggs
2 tsp baking soda
1 tsp salt
2 cups chopped pecans
1 1/2 cups flour
2 tsp cinnamon
3 cups of grated carrots
Cream sugar and eggs. Add the oil and then the dry indredients, mixing until smooth. Fold in carrots and nuts. Bake at 350 degrees for 40 to 45 minutes in a greased 9x13 pan.
Cream Cheese Frosting
1 pound powdered sugar
8 oz cream cheese
1/2 stick butter
1 tsp vanilla
Cream all ingredients together until very smooth and not too thin. Frost cake in keep in refrigerator to keep frosting firm.
