Hi Alison,Here is another cookie from the "Mrs.Field's Cookie Book".Again i've not tried these.They look yummy & again "no eggs" in the recipe.

Macadamia Nut Coconut Crisps:
Yield 3 dozen

1 c.all purpose flour
1 c.(4 oz.)raw macadamia nuts,coarsely chopped
1/2 c.shredded sweetened coconut
1/2 c.salted butter,softened
1/2 c.light corn syrup
1/2 c. dark brown sugar,firmly packed
2 tsp.pure vanilla extract
1/3 c.(2oz.)miniature semisweet chocolate chips

Preheat oven to 375 degrees.Whisk flour,nuts,& coconut in a medium bowl.Set aside.

Heat butter,corn syrup & brown sugar in a 2 qt. saucepan till boiling,stirring occasionally.Remove saucepan from heat & stir in vanilla.Add flour mixture & chocolate chips & mix till all ingredients are equally distributed.

Drop by 1/2 teaspoonfuls onto well greased cookie sheets,2 " apart.Bake 8-10 minutes or till mixture spreads & bubbles.

Cool cooikes for 1 minute on pan,then immediately transfer to a cool,flat surface with a metal spatula.Cookies will remain soft till comepletely cooled.
