FAJITAS
(Meat Strips)
INGREDIENTS:
1 + Lb *Lean Boneless Meat (cut into thin 1/4 inch strips)
1 Med Onion (sliced)
2 Med **Bell Peppers, cut into 1/4 inch strips(discard stems, seeds and membranes)
2 Tbs Lime Juice.
1 Tbs Oil.
1 Tsp Dried Oregano (crushed)
1 Tsp Chili Powder.
1/2 Tsp Ground Cuminos.
1/2 Tsp Garlic Powder.
Dash HOT Pepper Sauce--Optional.
*NOTES:
* Any meat may be used, beef, pork, turkey, chicken or in any combination.
** Bell Peppers may be: Red, Green, Yellow or in any combination.
INSTRUCTIONS:
In a medium bowl combine the garlic, oregano, cuminos, salt, lime juice and HOT pepper sauce.
Add the meat and marinate for 15 - 20 minutes stirring occasionally.
In a large heavy skillet or WOK, heat oil until almost smoking.
Stir and fry the meat strips until tender.
Stir in the chili powder, onion and bell peppers.
Stir and fry 3-5 minutes more until onions are tender.
**Marinade can be added to the skillet and juices (after the meat has been removed) and brought to a slight boil, then simmered for 10 minutes and served with the meat as an accompanying sauce.
