Mexican Muffins Makes 12
1 cup milk 1/2 stick (1/4 cup) melted butter or margarine 2 eggs beaten to blend 2 cups all purpose flour 2 tsp Baking Powder 2 tsp ground cumin 1/2 tsp salt 1/2 cup chopped fresh cilantro (cilantrillo)
Preheat oven to 400 F. Grease a 12 cup muffin tin. Combine milk, butter & eggs in medium bowl. Combine flour, baking powder, cumin & salt in another bowl. Add to milk mixture & stir just until blended. Mix in cilantro. Spoon into prepared tin. Bake until tester inserted in center comes out clean, about 15 minutes. Serve warm.
