Perfect Chocolate Cake
Cake:
1 c. cocoa 2 c. boiling water 2 3/4 c. sifted flour 2 tsp. baking soda 1/2 tsp. salt 1/2 tsp. baking powder 1 c. butter 2 1/2 c. sugar 4 eggs 1 1/2 tsp. vanilla extract
Filling: 1 c. heavy cream 1 tsp. vanilla extract 1/4 c. confectioners sugar
Frosting: 6 oz. chocolate chips 1/2 c. light cream 1 c. butter 2 1/2 c. confectioners sugar
Combine cocoa and water in medium bowl; mix with wire whisk until smooth. Cool. Sift together flour, soda, salt and baking powder. Beat butter, sugar, eggs and vanilla at high speed until light and fluffy. At low speed, beat in flour mix alternately with cocoa mix until blended. Pour into 3 (9-inch) round greased cake pans. Bake at 350 degrees about 30 minutes.
Beat together filling ingredients and spread between cooled cake layers.
Heat chocolate chips, cream and butter for frosting. Mix well and add confectioners sugar. Place over ice and beat until holds shape. Spread on top and sides of cake.
