When I have left over cake, I fold it into softened ice cream. Then let is freeze until firm. It is so good.
Here in Buffalo we have Perry's Ice Cream and they have Pastry Shoppe flavors, one is called Piece of Cake. It is French Vanilla with pieces of yellow cake and fudge frosting swirled in, it is to die for!
Jess, your recipe sounds so good, that is a great use for leftover cake. I just love bread pudding.
