Frank's Rice Pudding
This is better than baked. Very good. My friend's husband makes it all the time, so we just call it Frank's Rice Pudding.
1/2 gallon plus 3/4 cup milk 1 cup rice (uncooked) 1 1/4 cups sugar, divided 4 eggs 2 teaspoons vanilla dash of nutmeg
Pour milk, rice, and 3/4 cup of the sugar into a stock pot and bring to a boil over medium heat. When it boils cook 20 minutes, stirring occasionally.
In seperate bowl mix remaining 1/2 cup sugar, eggs, vanilla, and nutmeg. Slowly add 1 to 2 laddles of hot rice and milk mixture to the egg mixture, then pour the egg mixture into the hot milk-rice mix, stir until the pudding begin to boil again. Remove from heat. Dhill at least 3 hours.
ps On Patty's Day they make it green with food coloring.
