For the past few years, my husband has been not able to have chocolate. This has caused me to search out non-chocolate desserts to suprise him with. Last night I put together the following dessert & got rave reviews from him. He is a big cherry fan(that makes 1 of them in our house!) & mentioned that it wasn't all that cherry-y tho he liked it a lot.Next time I will stir 1/2 an envelope of unsweetened cherry flavor Koolaid into the condensed milk before adding the rest of the ingredients. This dessert is low fat, but probably HIGH sugar! I would add some chopped nuts, but he's not a big fan of them in things, & he's the one I'm cooking for. As Janet Elliot wrote: "Cooking for my only one, Cooking for my dear, Slide him front from burner rear, Indulge his every whim, Think you that I am lonely, While I honeymoon with him?" (excerpt from Kinder, Kuche, Next of Kin, Janet M. Elliot)

So...finally...here's the recipe!

Yummy Cherry Stuff
1 can sweetened condensed milk
1/2 envelope cherry flavor Koolaid (optional)
1 (21 0z) can Lite Cherry Pie Filling or topping (reduced sugar)
8 oz. fat-free Cool Whip
1 cup mini marshmellows

Combine condensed milk and Koolaid powder if using. Stir well. Add remaining ingredients, mixing well. Chill 30 minutes. Keep any leftovers in refrigerator.
