I have doubled this but never tripled it but I am sure can. You won't be disappointed!
This is a terrific casserole! Great for Dinner but also wonderful for pot luck dinners, Buffets or the like. There is never any leftovers.
Beef Casserole Source; "Company's Coming Lunches”- Jean Pare
1 1/2 lb Ground beef 1 c. onion, chopped 1 Tbs oil 12 oz. Kernel corn, drained 10 oz. Condensed cream of chicken soup 10 oz. Condensed cream of mushroom soup 1/4 c. red pepper or pimiento chopped (optional but looks nice) 1 c. Sour cream 3 c. cooked noodles 3/4 tsp salt 1/4 tsp pepper 1 tsp Beef soup powder 1/4 c. Butter or margarine 1 c. Cornflake crumbs
Scramble fry ground beef with onions in the oil. Drain off the fat and discard it. Remove from heat. Stir in corn, chicken and mushroom soups. Add red pepper and sour cream. Mix lightly. Add prepared noodles. Sprinkle salt, pepper and beef powder over the top and stir to combine. Pour into 2 1/2 qt. casserole. In small saucepan, melt the butter. Add cornflake crumbs. Stir to moisten evenly. Spread over top of casserole. Bake uncovered at 350 for 35-45 minutes until hot. Serves 10.
