Hi, Grancy Nancy! If you haven't tried brining your chicken pieces yet, that might be a good thing to experiment with. Here's a basic start for you:

Dissolve:
3/4 cup of Kosher salt
3/4 cup of sugar
1 quart of water

Pour the solution into a gallon ziplock bag or a large container.

Place 5-7 chicken breasts into the brine mixture, and refrigerate for 1 1/2 to 2 hours.

Then be careful not to overcook, and your chicken should be fine.
