Here is one of our favorite frostings - it's low fat and the recipe can be doubled with good results. Since you add the butter last, you could experiment by adding just enough butter to get the results you want instead of the whole amount.
Glossy Chocolate Frosting
1/2 cup sugar
1 1/2 tablespoons cornstarch
1 (1 ounce) square unsweetened chocolate, grated (or liquid packet)
Dash of salt
1/2 cup boiling water
1 1/2 tablespoons butter or margarine
1/2 teaspoon vanilla (or try flavored extracts - mint, rum, raspberry, etc.)
Mix together sugar and cornstarch; add chocolate and salt. Stir in the boiling water. Cook, stirring, over medium heat until mixture becomes thick (I do this in the microwave - watch closely). Remove from heat and stir in the butter and vanilla. Spread on cake while frosting is still hot for glossy frosting that stays soft and smooth.
Will frost 1 loaf cake or 9" square - double for layer cake
Good on cream puffs or brownies too!
