HOW TO PREPARE POLENTA
To prepare a simple, fantastic polenta all your friends will talk about forever...
chicken stock (or preferred stock) polenta (dry) herbs (optional)
Use 4 parts seasoned stock to 1 cup dry-measured polenta.
Bring stock to rapid boil. Add polenta and stir vigorously with a wooden spoon (metal will bruise polenta) until stock is incorporated.
Turn fire to medium heat simmer for 25-30 minutes longer or to preferred doneness (about 20 minutes for al dente).
If desired, fresh thyme or other herbs may be stirred into the cooked polenta to heighten flavor.
