Carmen: Are you from Puerto Rico too? I am. The Bunuelos is a typical Cuban recipe. In Puerto Rico we do Buñuelos also, but we call them CROQUETAS o FRITURAS. Here is a recipe for the Buñuelos de Ñame, but you can do the same recipe with any kind of vianda.

BUÑUELOS DE ÑAME
(my translation)

1 lb. of shredded uncooked ñame (yam)
1 1/2 tsp of salt
2 eggs beaten
3 tb all purpose flour
Oil or shortening for frying the buñuelos

Mix all the ingredients in the order they appear in the recipe.

Drop the mixture by tbsp in the hot oil and and fry until golden in color.

Place on paper towels so that the oil is completely drained.
