A cushaw is a member of the pumpkin family. It is crooked necked and usually green stripped. One pumpking could feed a small army. They are harvested in the fall, have a large round body with a small crooked neck similar to yellow squash. The flesh is a medium to light shade of yellow green. I like to simmer them in water until fork tender, mash them and add butter, sugar and cream to thin similar to sweet potatoe casserole. They are also used for pies. Tthey must be peeled first.
