SESAME CHEESE ROLLS Makes 24 rolls
4 to 4 1/2 cups unbleached flour, divided use 2 tbsp. granulated sugar 2 pkgs. active dry yeast 1 1/2 tsp. salt 3/4 cup milk 1/2 cup butter or margarine 1/2 cup water 1 egg 1 egg yolk butter or margarine (for topping rolls) Grated Parmesan cheese 1 egg white, slightly beaten Sesame seeds
In large bowl, mix together 1 1/2 cups flour, sugar, yeast, and salt.
In a saucepan, combine milk, water, and 1/2 cup butter. Heat until warm (105 to 115 degrees). Add to dry ingredients.
Beat at medium speed for 2 minutes. Add egg, egg yolk and 1/2 cup flour. Beat at high speed for 2 minutes. Stir in enough additional flour to make a soft dough.
Turn onto floured board. Knead until smooth and elastic. Put in oiled bowl, turning to grease top. Cover with plastic wrap, allowing plastic to touch dough. Let rise in warm place 1 hour or until doubled.
Punch down. Divide in half. Roll each half into 12-inch circle. Slice each into 12 wedges, without disassembling circle.
Spread each circle with butter. Sprinkle with cheese. Roll up each wedge from wide end. Arrange tip-side down on greased baking sheets.
Brush with egg white. Sprinkle with sesame seeds. Let rise 30 minutes or until light.
Bake at 400 degrees for 12 to 15 minutes.
