You might try this, I mix up eggs and whatever ingredients to make an omelet and instead cooking on the stove top, I pour into a cupcake pan (use non-fat cooking spray) and bake until done. Then you can freeze them & only takes a few minutes to defrost/heat. You can use things like egg substitue and other low fat ingredients. I freeze them and then use my vacuum sealer, they'll last quite a while this way.
