THIS MAKES EXCELLENT ROAST BEEF! :) THE ONLY THING DIFFERENT I DO, IS RUB THE OUTSIDE WITH OLIVE OIL, AND PLACE ABOUT 2 OR 3 CLOVES OF GARLIC IN THE FAT BEFORE ROASTING.....I ALSO USE KOSHER SALT, AND OF COURSE FRESHLY GROUND PEPPER, IF YOU HAVE IT...IF NOT, THE OLD FASHIONED KIND WORKS WELL TOO.....INCREDIBLY TENDER AND MOIST! A REAL WINNER.....
