CASHEW CRUNCH
I have been experimenting with a cashew crunch recipe since my sister in IL sent me a taste of this buttery delicious candy from a local candy maker (LaValle). This is a crunch not a brittle.
1 cup butter 1 cup sugar 2 cups cashews or peanuts
I use a Dutch oven. Melt the butter, add the sugar, and stir constantly until the color looks right. Light golden brown.
Add the nuts and immediately throw onto an awaiting cooking sheet. Spread while hot and break after cooled. You will need paper towel to absorb the extra butter on the cookie sheet. Time and practice will create the perfection you tasted.
