SAUERKRAUT CHEESE BALL
1 (16 oz.) can sauerkraut, drained 1 1/2 lbs. grated Cheddar cheese 2 hard-cooked eggs, chopped 1/2 cup onion, chopped 1/2 cup green bell pepper, chopped 1/2 cup soda crackers, crushed 1 tbsp. sugar 1/4 to 1/2 cup mayonnaise 1 cup walnuts, chopped (for topping)
Mix sauerkraut, cheese, chopped eggs, onion, green pepper, crackers, and sugar.
Add mayonnaise to moisten.
Shape into ball and sprinkle or roll into chopped walnuts. Refrigerate.
Serve with crackers.
Makes 2 large cheese balls

This recipe isn't tried and true as you requested, but I thought I'd post it for you anyways. Maybe you can make a quarter-recipe to experiment with it. I would be tempted to mix some softened cream cheese into it.
