Here is the recipe I have for beer bread. It is rather sweet; you might consider dropping the sweetening a bit. Also, I eliminated the butter on top.
Beer Bread
12 ounces flat beer
3 cups self-rising flour
3 tablespoons honey or sugar
melted butter (optional)
Preheat oven to 350F.
Mix together beer, self-rising flour and honey until JUST blended; do NOT overmix.
Turn batter into a standard-sized loaf pan. Bake for 70 minutes. Brush top with melted butter after first 60 minutes, if desired.
