GLOSSY CHOCOLATE FROSTING

1/2 cup sugar
1 1/2 tablespoons cornstarch
1 (1 ounce) square unsweetened chocolate, grated (or liquid packet)
Dash of salt
1/2 cup boiling water
1 1/2 tablespoons butter or margarine
1/2 teaspoon vanilla (or try flavored extracts - mint, rum, raspberry, etc.)

Mix together sugar and cornstarch; add chocolate and salt. Stir in the boiling water. Cook, stirring, over medium heat until mixture becomes thick (may be made in the microwave - watch closely).

Remove from heat and stir in the butter and vanilla. Spread on cake while frosting is still hot for glossy frosting that stays soft and smooth.

Will frost 1 loaf cake or 8 or 9-inch square (double recipe for layer cake or 13x9-inch cake).

Hi Dana,

This is one of our favorite frostings. It isn't too sweet and also makes a good hot chocolate sauce for ice cream while warm.
