Can you freeze cream puffs? Yes, either filled or unfilled. Just let them cool. Put them in your freezing medium (plastic, freezer bag, etc.). I'm not sure if you can freeze custard but you can certainly freeze cool whip type fillings and real cream.

Mini cream puffs can be made, cooled completely to room temperature, and then frozen in gallon-sized zip lock bags. When you need to freeze cream puffs, do it without any filling inside. The most important thing is to let them cool down absolutely to room temperature before you put them in zip-lock bags, or else they WILL be mushy when you defrost them. Otherwise, to defrost, place them on a wire cake rack in a single layer and let them slowly thaw. Don't refreeze, however, because they'll taste stale afterward. Then cut off the tops and fill.

I have frozen them for up to 6 months. I took out the filaments in the center, cooled them, wrapped them in plastic wrap, and place them in a zip lock. Put them in an area, where nothing is going to be placed on top of them. To use them, simply thaw and fill as usual.
