On the Lard for the Enchilada Sauce, 2 pounds is alot. Any suggestions on substitutions?

I also got a recipe that states it is their sauce from the San Mateo Times Food Section.

Any thoughts on the rice?

We went to the new location on Balboa Ave. If you www.clusty.com the Hot House, you'll find that in the last few years, the original owner past away as did a long time employee.
