Everyone has their own method of making Italian beef.
Chuck roast is my favorite meat to use. I trim all fat, brown and place in crock pot with 1 envelope of onion soup mix, chopped garlic and beef broth. I have added a few pepperoncini peppers to cook with the meat.
Cover and cook on low heat. After a few hours, poke the meat with a long fork and twist. The meat will fall apart.
