HERB PITA CHIPS

8 pitas
2 egg whites
1/4 cup olive oil
1/2 cup chopped fresh parsley
1 tablespoon chopped fresh (or 1 tsp. dried basil)
1 tablespoon chopped fresh (or 1 tsp. dried tarragon)
1/2 teaspoon coarse salt

Preheat oven to 300 degrees F.

Split pitas; quarter each half to make 64 triangles.

In small bowl, whisk egg whites until foamy. Whisk in olive oil, parsley, basil, tarragon, and salt until well-mixed.

Spread egg white mixture on pita triangles. Place on ungreased baking sheet.

Bake for 15 minutes, or until lightly toasted. Cool before serving.

Servings: 8
