SWEET POTATO MINI MUFFINS1/2 cup margarine
1 1/2 cups sugar
2 eggs, beaten slightly
1 1/4 cups mashed canned sweet potatoes
1 1/2 cups all-purpose flour
2 teaspoons baking powder
1/4 teaspoon salt
1 teaspoon salt
1 teaspoon cinnamon
1 cup milk
1/4 cup chopped pecans
1/2 cup raisins
Preheat oven to 400 degrees F.
Cream margarine and sugar. Add eggs and potatoes; set aside.
Sift together flour, baking powder, salt and cinnamon. Add these dry ingredients alternately with milk. Fold in pecans and raisins. Fill greased miniature muffin tins 2/3 full.
Bake 25 minutes at 400 degrees.
May be frozen.
Makes 3 1/2 to 4 dozen mini-muffins
