I fear it might be too late for Robin, but I'd love to share them anyway. When I make these and I'm not out to impress anyone I'll use the disposable foil pans, they work great and there's no clean up. Yay! And all of these are easily doubled for larger crowds.

HAM ROLL UPS
makes 18

1 stick (1/2 cup) margarine
1 small onion, chopped
8 to 10 eggs (when doubling use two dozen)
1/2 brick sharp cheddar cheese, shredded
1/2 brick longhorn colby cheese, shredded
2 pkg. ham slices (rectangles, not squares)
1 jar cheese whiz

In a large skillet melt the butter and saute the onion. Add the eggs and cook until scrambled. Let cool.

Add the cheese while still slightly warm. Use two slices of ham per rollup (overlap slightly-long sides together). Add egg and cheese mixture and roll up lengthwise. (for small children roll up beginning at the shorter end)

Spray large oblong casserole with cooking spray and place roll ups in the dish (they can be stacked on top of one another if space is an issue-saves you from having to use two dishes for large amounts). Once all are in the dish cover with foil and place in frig overnight.

In the morning leave foil on and bake at 350' for one hour. Serve warm with warm cheese whiz drizzled over top.


BRUNCH CASSEROLE
Serves 12-15

5 slices bread - crusts removed and buttered on both sides
3/4 lb shredded cheddar cheese
1/2 lb raw bacon, diced (can use ground sausage in place of bacon - do not precook the meat or it will end up over done!)
4 eggs, slightly beaten
1/4 to 1/2 tsp dry mustard according to taste
2 cups milk

In a 10x6 baking dish lay the buttered bread in the bottom. (You do not need to grease the pan - if you haven't noticed it's not a fat free recipe!) If you have to cut the pieces to fit, but use it all. Cover the bread with the cheese (this will seam like alot, but it cooks down). Sprinkle bacon around on top of cheese. Combine the eggs, mustard and milk. Pour over the top. Cover will plastic wrap and refigerate overnight.

Place in a 350 degree F oven UNCOVERED for 1 hour and fifteen minutes. Check for doneness, knife should come out clean. Cut into squares and serve warm.


BLUEBERRY FRENCH TOAST CASSEROLE
Serves 15 to 20

10 slices cinnamon swirl bread (about one loaf)
1 (8 oz.) pkg. brown sugar and cinnamon flavored cream cheese
1 cup fresh or frozen blueberries (you do not need to prethaw if frozen)
5 eggs
1 cup milk
1/4 cup maple syrup
1/4 cup sugar

Break or cut half the bread into small pieces and place in the bottom of a buttered 9x13 baking dish. Sprinkle half the blueberries over the top. Dollup half the cream cheese around and spread around just a bit to distribute. Add the rest of the bread, blueberries and cream cheese on top in the same fashion.

Beat the eggs and add in the milk, syrup and sugar. Mix well and carefully pour over the bread. Cover with foil and chill overnight.

Bake at 350 degrees F covered for 25 to 30 minutes. Uncover and bake 25 to 30 minutes more. Serve warm.
