I usually will use MacIntosh apples but they are hard to find here in Colorado Springs. They are great for baking. I like their taste semi sweet, a little tart. When ou use them they do not turn to "mush" either. My Grandma always used to tell me to peel them and toss them with a couple Tablespoons of flour. My teenagers like them when I use a "wrapple" ( that carmel circle you use to make carmel apples in the microwave) and lay that on top (before the top crust goes on) right before you bake it.
