I just use a mandoline to slice the cucumbers and onions and then sprinkle with salt and pepper, a dribble of e.v. olive oil and a good squeeze of fresh lemon juice.

The most important thing is that it rest for at least 2 hours before eating. The salt needs to get the juices out of the cucumbers and onions.
