BEEF WITH CHEESE DUMPLINGS
1 lb ground beef 1 small onion, chopped 3 cloves garlic, minced 2 Tbs diced bell pepper 1 (16 oz) can tomatoes 1 (6 oz) can tomato paste 1-1/2 tsp salt 1/8 tsp pepper 1 tsp Worcestershire sauce 1/2 tsp sugar (this cuts the acid in the tomatoes) 1 Tbsp Bisquick 1 cup hot water 2 cups Bisquick 1 cup (4 oz) shredded cheddar cheese 2/3 cup milk
In a Dutch oven, cook and stir ground beef, onion and garlic until beef is brown and onion and garlic are tender; drain. Mix in bell pepper, tomatoes, tomato paste, salt, Worcestershire sauce, sugar and pepper; bring to a boil, then lower to a simmer.
Stir together 1 Tbs Bisquick mix and the water; stir into the beef mixture (acts as a thickener). Heat to boiling, stirring occasionally; lower heat back to a high simmer.
In a mixing bowl, stir together 2 cups of Bisquick, grated cheese and milk, then mix into a soft dough. Drop by tablespoons onto simmering beef mixture.
Cook uncovered for 10 minutes over low heat; then cover and cook 10 minutes longer. |
