Linda - Basil is a delicate herb. It's been my experience and that of others whom I've asked that the best way to preserve it is to freeze it in ice cubes, with about a Tablespoon per cube. That way you can simply drop the ice cube into your sauce or whatever and the water will evaporate if you need it to.
