Recipe(tried): Fresh Apple Salad

This is the best fruit salad I have ever eaten. It stay crisp and fresh in the refrigerator for days and does not turn dark or watery.

Fresh Apple Salad

1 (20oz) can pineapple chunks, juice drained and reserved
1/4 cup butter
1/4 cup sugar
1 Tbl. lemon juice
2 Tb. cornstarch
2 Tbl. water
1 cup mayonnaise
8 cups chopped unpeeled tart red apples (I used red delicious apples)
2 cups seedless green grapes
1-2 teas. poppy seeds
1 1/2 cups toasted pecans or walnuts

In a small saucepan, combine pineapple juice, butter, sugar and lemon juice. Bring to a boil. Combine cornstarch and water to make a smooth paste, add to the hot micture, cook until thick and smooth. Chill completely; stir in mayonnaise. Combine pineapple, apples, grapes and poppy seeds in large glass bowl. Add dressing; refrigerate until time to serve. You want this good and cold. Stir in nuts just before serving.

This salad is a really pretty salad especially served in a clear glass bowl.
