Hi Wendy:

Yum your barbie sounds wonderful. Here's two great desserts that have been in my family for many years -- good for bbq (barbies)

HEAVENLY HASH

1 pkg. lemon Jello
1/2 cup cooked white rice
1/2 cup sugar
1 small can crushed pineapple
1/2 tsp. vanilla
1 cup cream, whipped

Prepare jello and and let partially thicken before adding above ingredients to graham cracked crust lined loaf pan. Chill well, serve with whipped cream topping.

PEARS ARMENONVILLE

8 large pears
1 cup sugar
1/4 cup lemon
2 T. butter
2 10 oz. frozen raspberries, thawed
1/4 cup port or other sweet wine
sour cream for garnish

Peel pears leaving stems intact; do not core. Place in 3 qt. casserole and add sugar, lemon juice, butter and 1 cup boiling water. Bake covered, 45 minutes or until pears are tender. Drain and chill. (This can be done the day before)

When ready to serve -- In blender or with mixer blend raspberries and wine until well mixed, Place pears in shallow dish and pour on raspberry mix. Chill, turning pears occasionally to coat.

To serve:

Put pears in sherbert dishes, top with sour cream.
