This is a crowd pleaser. Nana Jenny used to make this, and passed the recipe on to my Mom some thirty years ago. When I married the recipe passed to me. Now I would like to share it with you. Nana Jenny's Noodle Pudding 1/2 lb. noodles (extra wide work the best) 1 c. sugar 2 sticks margarine (melted) 4 eggs, separated 1 tsp. vanilla 1/2 pint sour cream 3/4 lb. cottage cheese 1 c. (13 1/2 oz. can) crushed pineapple, drained 1/3 box graham crackers, crushed Preheat oven to 350. Cook noodles. Drain well. Pour melted margarine (or butter) into bottom of casserole. Add noodles to margarine and toss until coated. In a seperate bowl, cream sugar, vanilla, cottage cheese, sour cream and egg yolks. Add to noodles. Stir in pineapple. Beat egg whites til fluffy and begin to hold a peak. Fold into noodle mixture with a slotted spoon. Top noodles with the crushed graham crackers, sprinkle with some cinnamon sugar, and dot with butter or margarine. Bake uncovered for 40-45 minutes. This is even good cold the day after.
