Hi All from Sunny Cape Town, South Africa - here's a favourite recipe of mine that was passed onto me by my Gran - it can either be used as a starter or as a main salad dish!
Ingredients include :-
Frozen Hake - skinless & boneless (as many pieces as you wish - dependant on number of guests - for two of us I normally use 4 small pieces)
Onion - 1 tablespoon finely chopped
Bring water to boil with onion - add the hake and boil together for +/- 7 minutes (can be 5 minutes but not longer than 7 mins - fish must still be quite firm) - take the fish out and put into a bowl - either refrigerate overnight, or put into the freezer until thoroughly chilled (+/- 40 mins to an hour)
Sauce

1 cup mayonnaise
Pinch of salt and black pepper (to your taste)
1 tin (170ml) evaporated milk
5 dessertspoons of tomatoe sauce
2 teaspoons of Worcestor Sauce
2 teaspoons brandy
Sprinkle of Paprika
Mix all ingredients together until well stirred - either refrigerate overnight, or put into the freezer to chill (+/- 30 mins to 40 mins). Stir every so often so as to keep the sauce smooth. Make sure the fish and sauce are chilled right through, but not frozen!
Break hake into chunks, add the sauce, mix well together and dish up over shredded lettuce - garnish with parseley and / or slices of lemon. I normally make a salad and add this, and it is really super!
I've tried this recipe without the evaporated milk and brandy, but unfortunately it doesn't taste as nice!
