Nancy, Another thing I made which people ask me to make often are Pecan Tassies: Crust: 3 Sticks unsalted butter, 3 - 3oz. pkgs. cream cheese, 3 cups flour, 1 tsp. vanilla...... Mix all ingred. together and take 1 tsp. of dough & roll into ball and press into mini. muffin pan. FILLING: 1 box light brown sugar, 3 eggs, 3 Tbls. melted butter, 1 tsp. vanilla, 1/2 tsp. maple flavoring, 1 1/2 cups chopped pecans. Beat eggs, then add remaining ingredients. Pour into crust 2/3 full. Bake at 350 for 25 - 30 min. Note: Please don't overfill or they will cook out on the tins and be hard to get out and won't be as pretty. Learned this lesson when I let the children help once and didn't have the heart to go back and do all their hard work over!
