Here are two bar recipes that are favorites:
Pecan Pie Squares
Crust:
3 cups all-purpose flour
1/3 cup sugar
¾ cup margarine or butter, softened
½ teaspoon salt
1. Heat oven to 350 degrees. Grease jelly roll pan, 15½ x 10½ x 1 inch.
2. Beat flour, sugar, butter and salt in large bowl on low speed until crumbly. (Mixture will be dry.)
3. Press firmly in pan.
4. Bake about 25 minutes or until filling is set. Cool completely.
Filling:
1½ cups sugar
1½ cups corn syrup
3 tablespoons butter, melted
1½ teaspoons vanilla
4 eggs, slightly beaten
2½ cups chopped pecans
1. Mix all ingredients except pecans in large bowl until well blended. Stir in pecans.
2. Pour over baked layer; spread evenly.
3. Bake about 25 minutes or until filling is set. Cool completely.
Note: I always line the baking pan with foil and let it stick up on the sides of the pan. That way you can just lift them off the pan to cut and it doesn't bubble over into your oven.
