Here is something I make, and you can add peppers
Shoepeg Salad
1 can white shoepeg corn 1 can early small peas (LeSeur is what I use) 1 can french style green beans 1 small onion, chopped finely 1 jar pimentoes 1 cup cider vinegar 1 cup oil 3/4 cup sugar 1 tsp salt 1/2 tsp pepper
In a saucepan, combine the oil, vinegar, sugar, salt and pepper. Add chopped onion. Bring to a boil, then simmer 5 minutes. Let cool. Drain all vegetables and mix them together in a bowl. Add dressing. Stir well, and refrigerate several hours until serving. Keeps a couple of weeks in the frig, supposedly, but mine never lasts that long! Good Luck!
