This sounds similar and maybe could be adapted: HOLIDAY STEAMED PUDDING 3 T. shortening 1/3 c. sugar 1 tsp. vanilla 1 egg yolk 1/2 c. chopped dates 1/4 c. candied cherries 1/4 c. chopped walnuts 2 c. honey graham cracker crumbs 1 tsp. baking powder 1/4 tsp. salt 1/2 c. milk 1 egg white Cream together shortening, sugar and vanilla. Beat egg yolk and add to creamed mixture. Stir in dates, cherries and nuts. Combine cracker crumbs, baking powder and salt. Add alternately to fruit mixture with milk. Beat egg white until stiff and fold in. Fill 6 greased custard cups 2/3 full. Cover tightly with aluminum foil or double thickness of waxed paper. Steam 30 minutes in covered kettle, or in pressure saucepan, steam 10 minutes without indicator weight, then 10 minutes at 10 lbs. pressure. Serve with hard sauce.
