Mince two slices bacon and cook in a large non-stick skillet until browned. Add three cloves fresh chopped garlic, 1/2 cup each chopped green bell pepper, red bell pepper and onion. Cook until crisp tender. Stir in one can Cajun mixed vegetables (drained) and one 16 oz can stewed tomatoes with juice. Stir and cook on med heat until well blended and mixture is hot. Add salt and pepper to taste. Add any type cooked pasta, macaroni or noodles and heat. The mixture is also delicious as a sauce for grilled chiken or fish. This recipie is a big hit with my family. Hope you enjoy it too. It's easy and quick! Hot sauce and/or parmisan cheese are also good as toppings for this dish.
