Happy Holidays everyone!!

I pulled this recipe out to make sure I had everything on hand to prepare it
for the holidays and thought I would post it here in case anyone was looking
for an idea of something different to do with sweet potatoes for Easter. This
is not a traditonal souffle as its not eggy or puffy, but rather a light as air
casserole. I just love it, and hope you do too! :)

Sweet Potato Souffle

Boil 4 peeled, cubed sweet potatoes till tender. Beat them together with:

3/4 cup white sugar
2 eggs
1/2 cup butter @ room temperature
1 tsp vanilla
1/2 cup milk.

Mix well and pour into a buttered (2 qt) casserole dish. Mix together the
following until crumbly:

1 cup brown sugar
1/3 cup flour
1/4 cup cold butter, cut into little pieces
1 cup chopped pecans

Sprinkle evenly over the top of casserole. Bake at 350 for 45 minutes.
