Here is one we love. It dosn't have olives but I bet some sliced or chopped olives could be added.
CHICKEN SALAD
2 1/2 cups diced cooked chicken 4 strips bacon, cooked and crumbled 1 can (8oz)sliced water chestnuts 1/2 cup sliced celery 1 cup halved green or red grapes 1 can (2 1/4 oz) sliced olives (optional) Combine these ingredients in a bowl and set aside
Dressing combine: 3/4 cup mayonaise 1 to 2 Tablespoons dried parsley flakes 2 teaspoons finely minced onion 1/4 teaspoon ground ginger 1 teaspoon lemon juice dash of worcestershire sauce salt and pepper to taste
Add the dressing to the chicken mixture and toss to coat well. Chill until serving. 4- 6 servings.
You notice I did add sliced olives to the recipe. I think that is a great idea and will try it the next time I make this salad. Thanks for the idea. |
