Jello Cookies
Ingredients:
3/4 cup shortening
1/2 cup white sugar
1 (3 ounce) package of fruit flavored gelatin
2 eggs
1 teaspoon vanilla extract
2 1/2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon salt
1/2 cup nuts (optional)
Directions:
1 Preheat oven to 400 degrees F (200 degrees C).
2 Mix thoroughly shortening, sugar, gelatin, eggs and vanilla. Blend in dry
ingredients.
3 Roll dough into 3/4 inch balls. Place 3 inches apart on ungreased cookie
sheet. Flatten each with the bottom of a glass dipped in sugar. Bake for 6 to 8
minutes.
