Pasta always saves the day for easy recipes, and they're quick too! There is a good quick recipe for Creamed Spincah and Elbow Macaroni on the Vegetarian Swap Board. Also, I recently made Linquine with Clam sauce in about fifteen minutes.
Take about 1/4 cup olive oil, six cloves garlic and heat together in a skillet until garlic is beginning to brown. Add one 2 cans of your favorite brand of chopped clams. (I use Doxee) Add to the oil and garlic, add about 1/4 cup chopped parsley, a dash of white wine and some black pepper. Simmer until clams are heated through. In the meantime cook your linquine (about a half pound) Drain linquine and pour clam mixture over linquine and enjoy!
A dinner of Sauteed peppers, onions, sliced potatoes and eggs is easy and quick also. Just saute the peppers, onions and potatoes in a large skillet until tender in a bit of oil (enough to coat skillet) Add about five to six beaten eggs and allow to set, turn over to cook other side and you have a nice Frittada. Be careful when turning to cook other side. I place a dish over top of skillet, invert and slide back into skillet. I serve this with a salad and Italian bread and it is very quick and tasty!
