Joanne, First of all, I greased a shallow baking dish {(10X13X2) or so} with olive oil. I placed carrot, celery, and onion in the bottom of the dish. I seasoned the roast and placed it on top of the veggies,Uncovered. Placed it in a 325 degree oven on middle rack; did not cover and roasted. I basted it with chicken broth every 20 mins or so. I don't know how it would turn out if I didn't do that (dry, etc.) My roast was very small-1.65 lbs, so I roasted it for about 1-1/2 to 2 hours. I rely on a meat thermometer for exactness. (165-170 degrees for pork). I was very Juicy and good!! Hope this helps! I'm fairly new at this "Roast thing" too. Jill
