Hi All.. this is my first post.. I do a cooking show on a local morning show here in St. Louis Mo. and this is the most requested recipe that I've done.. and with all of the wonderful tomatoes available right now, this is a great easy dish!!! Enjoy!! Marianne (ChefGirl)
Grilled Chicken Breasts with Italian Relish 4 boneless skinless chicken breasts For the relish: 3/4 cup plum tomatoes, seeded and chopped (you can use any tomatoes, if Roma's aren't available) 3/4 cup chopped red onion 1/4 cup red wine vinegar 2 TBS olive oil 1 tsp dried basil 1 tsp dried oregano 1 or 2 cloves garlic - minced Salt and Pepper to taste Combine all ingredients in a bowl and let stand at least 15 min. or up to an hour. Arrange chicken in a glass baking dish in single layer. Drain liquid from the relish and pour over chicken. Reserve relish. Let chicken marinate for 15-30 minutes turning occasionally. Prepare grill (or pan) medium heat. Drain marinade and grill chicken until is is thouroughly cooked. Transfer to plates and spoon reserved relish over. This recipe can easily be doubled..
