Swedish Coconut Cookies
This cookie will melt in your mouth.
3 1/2 cups flour 2 cups sugar 2 cups butter, softened 1 tablespoon baking powder 1 tsp. baking soda 1 tsp. vanilla 1 cup flaked coconut
In large mixing bowl, combine all ingredients except coconut. Beat at low speed, scraping bowl often, until well mixed, 3 - 4 minutes. Stir in coconut. Divide dough into halves; shape each half into a 12 x 2 inch roll. Wrap in wax paper and refrigerate until firm, at least 2 hours. Heat oven to 350 Degrees F. Cut rolls into 1/4 inch slices. Place 2 - 3 inches apart on ungreased cookie sheets. Bake for 9 - 14 minutes, or until edges are lightly browned. Cool slightly; remove. Makes about 8 dozen.
