Hi all ! Here's a recipe I made this week at work and it turned out great!! Baked Tomatoes with Provancale Stuffing ( from Betty Crocker ) 4 medium tomatoes , unpeeled, cored , pulp removed & saved 1 TBSP. olive oil 3/4 cup chopped onions 2 cloves garlic,minced 2 1/2 TBSP. chopped fresh parsley 2 tsp. chopped fresh basil 1 1/2 tsp. chopped fresh thyme 1/2 tsp. salt 1/4 tsp. black pepper 3/4 cup fine,dry bread crumbs 1/4 cup plus 2 TBSP.grated Parmesan cheese
Preheat oven to 375 F. Core tomatoes and scoop the insides out to leave whole shells.Chop tomato pulp, reserve. Heat skillet with olive oil to medium heat and saute onions and garlic for about 3 minutes. Stir in reserved chopped tomato pulp,herbs and seasonings. Saute for about 4 minutes or until wetness evaporates. Remove from heat and stir in the breadcrumbs and 1/4 cup Parmesan cheese. Mixture will be thick. Stuff tomatoes shells with the mixture ( fully ) and sprinkle evenly with remaining Parmesan cheese. Place stuffed tomatoes on a lined baking sheet or cake pan ,and bake for about 15 minutes. Delicious !!!!!!!(especially with nice, ripe home grown tomatoes!!!)
