These muffins are really great, just found the rec while surfing early this am...the rec. was on the Texas Cooking Online site....found it through TKL!

PECAN CINNAMON MUFFINS
1 1/2 C. flour, sifted
1/4 C. sugar
1/4 C. brown sugar, packed
2 tsp. baking powder
1/2 tsp. salt
1/2 tsp. cinnamon
1 lg. egg, beaten
1/2 C. oil
1/2 C. milk
1/2 C. chopped pecans

Preheat oven to 400 degrees. Grease muffin pan.
Sift flour, sugar, brown sugar, baking powder, salt & cinnamon into mixing bowl. Combine egg, oil & milk in seperate bowl, blend well. Add all at once to dry ingredients, stirring just enough to moisten. Stir in pecans. Spoon batter into greased muffin cups & bake at 400 deg. about 20 minutes, or until golden brown. Serve hot with butter and jam or jelly.

Notes: I baked a double batch in 2 of the mini-bundt muffin pans, baked at 375 (because these pans are black & bake 'hot') for 12-15 minutes. They were just adorable & very delicious! Would be great for the HOLIDAYS! Cali : )
