Tony's Spaghetti Sauce (4) 28 ounce cans crushed tomatoes (2) 28 ounce cans tomato sauce (1) 12 ounce can tomato paste (1) 18 ounce can tomato paste 60 ounces of water ( appx ) 7-10 cloves ( crushed ) garlic 1 lb. lean ground beef 4 pork chops 1 pkg. Good Seasons Italian dressing mix 1/4 c. brewed coffee ( no, I am NOT kidding ! ) 2 medium diced onions 3 t. ground oregano 2 t. ground rosemary 1 t. ground basil 1 t. garlic powder 1/2 t. ground red pepper ( can use crushed red pepper ) 6 t. sugar 2 t. ground black pepper 4 t. salt 2 T. butter
In a LARGE pot ( more like a VAT !! )mix all tomato products and all seasonings and the coffee ( really ! ). Cook on low or med. low and stir as to prevent sticking.
While sauce is heating, prepare onions, garlic and meat. Saute the onions and garlic in the 2 T. of butter until unions and garlic begin to brown and carmelize. Put in sauce pot with tomato and spices already cooking.
Brown pork chops in skillet and place in sauce pot. Brown ground beef in skillet and drain grease, then add to sauce pot.
Simmer about 2-3 hours. After two hours, remove the lid and simmer another 1 1/2 hours. Romove from heat, remove pork chops ( serve these as a side dish ).
You can also leave out the meat and make it marinara sauce. I serve it that day and put the leftovers in quart freezer bags. This will keep wonderfully in the freezer for about 4 months.
